Pecan
Jumbles
An extremely easy Christmas cookie, that's a little sweet and slightly salty, and light enough that you want to eat them by the handful.

| 1/4 | c. | soft shortening |
| 1/4 | c. | butter |
| 1/2 | c. | Sugar |
| 1 | | Egg |
| 1 | t. | Vanilla Extract |
| 1-1/8 | c. | Sifted Flour (1 c. + 2 T.) |
| 1/4 | t. | Baking Soda |
| 1/2 | t. | Salt |
| 2 | c. | Chopped Pecans |

- Preheat over to 375 degrees.
- Mix together thoroughly the shortening, butter, sugar, egg, and vanilla.
- Sift together the flour, baking soda and salt, and stir into the wet ingredients.
- Stir in chopped pecans.
- Drop rounded teaspoonfuls about 2 inches apart on lightly greased baking sheet.
- Bake until delicately browned, 8-10 minutes; cookies should still be soft.
- Let cool for a moment, then move to cooling rack

Cooking time: 8 to 10 minutes
Makes: about 3 dozen two inch cookies |

Notes:
Quickly becomes a favorite of whomever tries them.
The original recipe was "Sugar Jumbles" with pecans or walnuts optional, and 1/2 c. shortening with part-butter optional, we found that pecans and butter
created the cookie that became our favorite, so we've stuck with them.
